Incredibly delicious, simple and easy Fajita recipe that is absolutely mouthwatering.



I love making Mexican food because number 1 I love flavorful food and number 2 it is quite simple to make. These Black Bean and Corn fajitas are so simple, easy and absolutely delicious. If you want you can even call them tacos, just add some lettuce, salsa, or whatever you normally would add to your tacos, and there you go, you just made yourself a veggie taco.
For this particular Fajita recipe, I added drained canned black beans, frozen corn, red onions, an orange bell pepper, green pepper, and red bell peppers , and sliced Serrano chili for a kick, however this step is optional. and you can pretty much use which ever pepper you would like and it will still turn out amazing.
As for toppings, you can pretty much chose what you would like to add. In this case, for this recipe I topped it off with sour cream, green chili, sliced avocado, and shredded taco seasoning cheese blend. However, any type will work just fine. It is really your preference. Down below in the recipe box I listed some toppings , you can add that will go well with this recipe.
Tip 1 : Take your sour cream and put it in a mixing bowl and whisk it together to get a smoother texture, do this technique and there you go, you just made yourself Chipotle's sour cream.
Tip 2: Warm your tortillas directly on your grill stove top to get a more char taste. Or you can warm it on a cast iron or non stick pan on high heat to get the same result, however, make sure pan is dry and keep an eye on it, you don't want to burn your tortillas.

Thinly slice your onions, red bell peppers, drain and rinse your black beans.
In a sauce pan add in about 1 -2 tbsp olive oil and saute onions for about 3 minutes (make sure they do not burn) on medium high heat.
Add in your red bell pepper, orange bell pepper, green bell pepper and let saute for about 5 minutes or so, or desired tenderness.
Than add in drained and rinsed black beans, corn , spices, squeeze lime and let cook on stove for about 5 more minutes. Taste and add additional season if needed. Remove and set aside
Warm tortillas and set aside.
Assemble fajitas, add in your fajita mixture, sour cream, or your desired topping.
Enjoy while warm

This recipe serves about 4 people ( 2 tacos each)
INGREDIENTS:
1-2 tbsp olive oil
1 medium red onion or white onion
1 red bell peppers
1 green bell pepper
1 orange Bell pepper
1 can black beans (drained, and rinsed)
1/2 cup frozen corn
Seasoning:
1/2 tsp salt or to taste
1/4 tsp black pepper or desired amount
1/2 tsp cumin powder
1 tsp garlic powder
1 tsp onion powder
1 tsp ground chili powder
1 tsp paprika
1/4 a lime ( or more)
1/2 cup chopped cilantro
Topping Optional :
Sour cream
lettuce
avocado
salsa
shredded cheese
Jalapenos
