Black Bean and Corn Fajita Veggies

Need a quick, easy and simple dish that's versatile. Well try out this recipe and you won't be disappointed


I love making Mexican food and one of my favorites are quesadillas. I love using this black beans and corn fajitas vegetable mixture as my filling. It gives it so much flavor and a great vegetarian option. You can add it in your tacos, burrito wraps, bowls you name it. It's absolutely delicious and won't disappoint. And the great part is that it's so quick and simple yet incredible.




Here's How to make it:


RECIPE:



INSTRUCTIONS:


  1. Thinly slice your onions, red bell peppers, drain and rinse your black beans.

  2. In a sauce pan add in about 1 -2 tbsp olive oil and saute onions for about 3 minutes (make sure they do not burn) on medium high heat.

  3. Add in your red bell pepper, and let saute for about 5 minutes or so, or desired tenderness.

  4. Than add in drained and rinsed black beans, corn , spices, squeeze lime and let cook on stove for about 5 more minutes. Taste and add additional season if needed

  5. Enjoy and serve with your desired dish

RECIPE:

This recipe serves about 4 people

INGREDIENTS
1-2 tbsp olive oil
1 medium red onion or white onion
2 red bell peppers
1 can black beans (drained, and rinsed)
1/2 cup frozen corn 

Seasoning:
1/2 tsp salt or to taste
1/4 tsp black pepper or desired amount
1/2 tsp cumin powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp ground chili powder
1 tsp paprika
1/4 a lime ( or more)
1/2 cup chopped cilantro
