Delicious Chicken Stir Fry with vegetables that is perfect for lunch or dinner.


This chicken stir fry is loaded with vegetables and incredibly flavorful. It is tossed in an incredible homemade sauce that is both sweet and spicy. Don't worry , the best part is that it is quite simple to make. Most of the ingredients can be found at your local grocery store.
For the sauce: I used low sodium chicken broth , low sodium soy sauce, sweet chili sauce and cornstarch.
Tip 1: You can use fresh vegetables or any frozen blend stir fry mix you prefer. You can also add additional vegetables to the frozen vegetable blend. In my case, I added extra onions and 1 medium size zucchini.
Tip 2: Try to use fresh garlic and ginger, instead of the jarred garlic ginger paste. It will make a huge difference.

In a medium size pan or wok heat 1 tbsp. of oil and add in your chicken strips, salt, pepper and ground chili powder and stir and cook until ready and remove from pan and set aside
In the same pan add in 1 more tbsp. of oil and add in your dried chili, garlic and ginger and cook for about a minute until fragrant. Now add in your onions and let cook for about a minute, add zucchini, and frozen vegetables and cook until tender. Make sure to cook until all the excess water is gone from the vegetables and they are nicely stir fried.
Add in your chicken, and sauce and combine well, taste for seasoning . Add additional seasoning if needed. Garnish with green onions or sesame seeds.
Serve with rice or noodles and enjoy while hot!

This recipe serves about 4 people
INGREDIENTS
2 tbsp. vegetable oil or any oil of choice
About 1 pound skinless boneless chicken or breast or boneless skinless chicken thighs cut into strips
salt and pepper to taste
1/2 tsp ground chili powder for chicken (optional)
1 medium onion sliced
1 medium size zucchini cut into cubes or your preference
1 16 oz bag of stir fry blend frozen vegetables
3 garlic cloves grated or chopped
1/2 tsp fresh ginger (grated)
1-2 red dried chili (optional)
1 stick of green onion chopped (optional for garnish)
1 tbsp sesame seeds (optional for garnish)
Sauce:
1/2 cup low sodium chicken broth
1/4 cup low sodium soy sauce
2 tbsp sweet chili sauce
1 tbsp cornstarch
