Creamy Linguine with Kale

We love to make pasta because there are so many ways you can make them and there are so many different types of pasta. It's always really nice to sneak in some veggies too. I love to add spinach or in this case, Kale. This pasta dish is something you sure will love.


Choosing the type of pasta:

You can simply substitute with any other type of pasta. For instance, fettucine, spaghetti, or penne.


Tip 1 : When boiling the pasta, always add a little bit of olive oil and salt to the water


Tip 2: You might need a little extra cheese, if you feel like the sauce is still to thin, feel free to add in more cheese and besides you can never have to much cheese right?


Here's How to make it:

INSTRUCTIONS:


  1. Boil pasta as directed on box and set aside

  2. In a medium sauce pan heat 2 tbsp of olive oil, add diced onions, add in your grated or finely chopped garlic and cook until fragrant, ( about 1 minute or so, make sure not to burn the garlic). Add tomatoes and let cook, add kale and cook until they are tender. Add in salt, pepper, ground chili powder, and dried basil.

  3. Now add in your heavy whipping cream, cheese, and a squeeze of lemon juice. Let simmer for about 3 minutes or until cheese and cream are well combined.

  4. Add in more cheese if sauce seems to be a little runny. However, if sauce seems to thick add in a little bit more of heavy whipping cream and continue to whisk until at the right consistency.

  5. Add in your linguine. Dried parsley or fresh. Add additional seasoning if needed.

  6. Top it off with a little bit bit more cheese , if you would like and enjoy while hot!

RECIPE:

This recipe serves about 5-6 people

INGREDIENTS:
3/4 16 oz box Linguine 
4-6 garlic gloves
2 tbsp olive oil
1 medium diced onions
4 roma tomatoes diced
3 cups chopped kale
1 pint heavy whipping cream 
1 1/2 cups of Parmesan( save about 1/4 cup for garnish or to add on top )
1 tbsp lemon juice
4 cloves of garlic (grated or finely chopped)
Seasoning
salt to taste and black pepper
1 tsp dried basil
1 tsp chili powder 
1 tsp crushed chili flakes (optional)
1/4 cup chopped parsley or about 2-3 tbsp dried parsley flakes
