Delicious, creamy Penne Pasta with mushrooms and sundried tomatoes.

We love to make pasta because there are so many ways you can make them and there are so many different types of pasta. Alfredo pasta is not something we have all the time, however it is something that we absolutely love and this Alfredo recipe is one that you will for sure love.
For this particular recipe, I used a penne pasta and added sautéed onions, mushrooms, and sun dried tomatoes. This Creamy Mushroom Penne is absolutely delicious. You can always substitute penne with any other type of pasta. Linguine, Fettucine, and Rigatoni would be great substitutes.
Making the Alfredo sauce:
For this particular sauce I used heavy whipping cream, and yes, I know it is not the healthiest option but you can substitute with half and half , however the only issue will be that the sauce might be a little to thin. In this case you will need to add a little bit more cheese to thicken it.
Tip 1 : When boiling the pasta, always add a little bit of olive oil and salt to the water
Tip 2: You might need a little extra cheese, if you feel like the sauce is still to thin, feel free to add in more cheese and besides you can never have to much cheese right?

Boil pasta as directed on box and set aside
Heat 1 tbsp or 2 of olive oil, add in your diced onions, and mushrooms , add in salt, black pepper, ground chili powder, chili flakes (optional) and dried oregano and cook until mushrooms are tender. Make sure to cook until all water is gone from mushrooms. Once ready set aside.
In the same pan heat 2 tbsp of olive oil, add in your grated or finely chopped garlic and cook until fragrant, ( about 1 minute or so, make sure not to burn the garlic).
Now add in your heavy whipping cream, 1/4 cup milk, 2 tbsp Philadelphia cream cheese and whisk together until smooth. Add salt to taste, black pepper and juice of 1/2 a lemon and cheese and whisk together for about 5 minutes until sauce thickens and well incorporated. Add in more cheese if sauce seems to be a little runny. However, if sauce seems to thick add in a little bit more of heavy whipping cream and continue to whisk until at the right consistency.
Add in your pasta, sautéed onions and mushrooms, and 1 jar of roughly chopped sun dried tomatoes, add chopped parsley or dried parsley and combine well. Add additional seasoning if needed.
Top it off with a little bit bit more cheese and garnish with more parlsey, if you would like and enjoy while hot!
RECIPE:
This recipe serves about 4-6 people
1 16 oz box Penne pasta
2 tbsp olive oil
1 pint heavy whipping cream
1/4 cup whole milk
2 tbsp Philadelphia cream cheese
2 1/2 cups of shredded Italian blend cheese ( save about 1/4 cup for garnish or to add on top )
4-6 garlic cloves
1/2 lemon juice
4 cloves of garlic (grated or finely chopped)
1 medium onion Diced
1 7 oz jar sun dried tomatoes (roughly diced)
1 8 oz pack Baby Bella sliced mushrooms (or mushrooms of choice)
1 tsp or 2 of dried parsley flakes or 1/4 cup chopped fresh parsley
For mushrooms and onions
1 tbsp olive oil
salt to taste
1/4 teaspoon black pepper
1 tsp chili powder
1 tsp crushed chili flakes (optional)
1 tsp dried oregano
