
Super simple and healthy vegetable egg muffins, These egg muffins are one of our go to breakfasts. It is full of spinach, mushrooms, onions and cheese and they are seriously incredible. INSTRUCTIONS:
Preheat oven to 425 degrees Fahrenheit
Dice your onions, roughly chop your mushrooms and spinach
In a medium pan heat 1/2 tbsp -1 tbsp olive oil, add in diced onions , mushroom, spinach, salt, pepper and ground chili powder and cook until they are tender. Make sure all the water is dissolved from the vegetables and they are nicely sautéed
In a mixing bowl, crack 6 eggs and whisk , add 1/2 cup shredded cheese and your vegetables and combine well.
Scoop the egg mixture into sprayed muffin tins and bake in the oven for about 10-15 minutes until cooked thoroughly.
Remove from tins and Enjoy!

1 medium onion
1-2 cups spinach
1 lb mushrooms
1/2 cup shredded cheddar cheese
