Easy and Simple Loaded Vegetarian Nachos

Mexican food is absolutely one of my favs and these black bean fajita loaded nachos are full of amazing flavor and super easy and simple to make. For this particular recipe, I used Chica Brand Tortilla Chips and their salsa which was packed with incredible flavor. Having said that, these Loaded Nachos is filled with black beans, onions, corn, red and green bell pepper and topped off with diced tomatoes, slices of jalapenos (just because I like it spicy), cilantro and a squeeze of lime.

INSTRUCTIONS:
Preheat oven to 425 degrees Fahrenheit
Thinly slice your onions, red bell peppers, green bell peppers, drain and rinse your black beans.
In a sauce pan add in about 1 -2 tbsp. olive oil and sauté onions for about 3 minutes (make sure they do not burn), on medium high heat.
Add in your garlic cook until fragrant, than add in your red bell pepper, and let sauté for about 5 minutes or so, or desired tenderness.
Than add in drained and rinsed black beans, corn , spices, squeeze lime and let cook on stove for about 5 more minutes. Taste and add additional season if needed
Assemble nachos in a sheet pan, layer tortilla chips, add fajita mixture, cheese, tomatoes, more fajita mixture if desired and more cheese than add tomatoes, salsa and jalapenos. Bake in the oven at 425 degrees Fahrenheit for about 10 minutes or until cheese is melted.
Add additional toppings if desired, such as cilantro, sour cream or hot sauce.

This recipe serves about 2-3 people
INGREDIENTS
1 8 oz bag of Chica Tortilla chips or any
1 Jar Chica Brand Salsa or any ( desired amount)
1-2 tbsp olive oil
1 medium red onion or white onion
1 red bell peppers
1 15 oz can black beans (drained, and rinsed)
1/2 cup frozen corn
1 8 oz Bag sharp cheddar cheese
Toppings:
1 diced red onion
1 jalapeno pepper (optional)
2-3 diced Roma tomatoes
1 avocado cubed or sliced
Seasoning for Fajita:
2 garlic cloves
1/2 tsp salt or to taste
1/4 tsp black pepper or desired amount
1/2 tsp cumin powder
1/2 tsp onion powder
1 tsp ground chili powder
1 tsp paprika
1/4 a lime ( or more)
1/2 cup chopped cilantro for garnish
