Easy and simple mushroom tarts for mushroom lovers.

I love to create recipes with simple ingredients, and most of the time I try to work with what we have. So, for the holiday season, we stocked up on frozen puff pastry. Now we have so much in the freezer that are short dated and have to use up. So, I have been trying to create simple and easy recipes from all the puff pastry.
With the global pandemic , we try not to make too many grocery trips. Mushrooms, puff pastry, cheese and jarred sun dried tomatoes is something we normally always have in our home. So, I decided to create this super easy and simple Mushroom Puff Pastry Tarts from what we had home and they are seriously amazing. They are so simple and you don't even need to many ingredients. They are filled with seasoned and sautéed mushrooms, sundried tomatoes and sprinkle of parmesan cheese.

INSTRUCTIONS:
Preheat oven to 425 degree Fahrenheit
In a medium pan add in 1-2 tbsp olive oil, add salt, black pepper, ground chili powder, dried basil and cook mushrooms until they are nicely sautéed and set aside,
Now take frozen pastry dough from freezer and thaw as instructed on package and roll out pastry dough , cut into 6-8 squares.
Fill the center of the tarts with mushrooms, roughly chopped sundried tomatoes and fold the edges inwards and egg wash the corners and sprinkle parmesan cheese on top.
Bake in the oven for about 10-12 minutes or until the corners are slightly golden. Remove from the oven and sprinkle more parmesan cheese if you would like.

This recipe serves about 6 people
INGREDIENTS
1 bag of frozen puff pastry ( thawed)
1 1/2 lb Mushrooms (roughly chopped)
1/3 cup sun dried tomatoes (roughly chopped )
1/2 cup parmesan cheese
1 whole egg For egg wash
about 1 tbsp of water
Seasoning for Mushrooms
1-2 tbsp olive oil
1/2 tsp of salt or to taste
1/4-1/2 tsp black pepper or to taste
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground chili powder
