
Adding the filling
Evenly spread the mushroom, onion and spinach filling onto the puff pastry. Spread your cheese over and roll into a log.

INSTRUCTIONS:
Preheat oven to 425 degree Fahrenheit
Take frozen pastry dough from freezer and thaw as instructed on package
Chop your onions, spinach and mushrooms and in a medium pan heat 1 -2 tbsp of olive oil, add your onions, mushroom, spinach, garlic, salt, pepper, and ground chili powder, dried basil and cook until they are nicely sautéed than add in chopped fresh parsley. Than set aside and let cool.
Roll out pastry dough, if dough seems sticky dust a little flour on the counter.
Evenly spread the mushroom and spinach mixture onto the pastry dough, than spread the mozzarella cheese and parmesan cheese and roll into a log.
Gently cut into even pieces. Transfer into a baking pan, egg wash the outside of the rolls.
Bake in the oven for about 15-20 minutes or until it is nicely golden.

1 bag of frozen puff pastry ( thawed)
1-2 tbsp olive oil
3 garlic cloves
1 16 oz pack slices mushroom
2 cups spinach (chopped)
1 medium onion
1 tsp dried basil
chopped fresh parsley (about a handful)
1 cup shredded Mozzarella Cheese
1/2 cup of parmesan cheese
1 whole egg For egg wash
about 1 tbsp of water
