Chewy oatmeal cookie bars with dried cranberries.


Super delicious Oatmeal Cookie Bars with cranberries and almond butter. They are perfectly sweet, chewy and tart. Oh yes, I said it. These cookie bars are it is packed with incredible flavors. You also choose any other butters such as peanut butter.
If you guys are a huge fan of oatmeal cookies than you will definitely love these bars. They are incredibly delicious, and they are truly addicting.
Here are a few tips you need to know:
Tip 1: Melt butter on stove, or in the microwave. If you would like you can use brown butter.
Tip 2 : Always separate your dry and wet ingredients. This makes a huge difference and it is a very important step.
Tip 3: Soak the dried cranberries in water for about 15 minutes, than pat dry.

INSTRUCTIONS:
- Preheat oven to 350 degrees Fahrenheit and line a 8 inch square pan with parchment paper 
- In a mixing bowl combine all purpose flour, oats, baking soda, and salt and set aside 
- In a separate bowl mix in your melted butter, light brown sugar, white granulated sugar almond butter, eggs and vanilla extract, and whisk together until well incorporated. 
- Slowly add in the the flour and oats mixture to the wet mixture, and combine well. 
- Add in your dried cranberries. 
- Transfer batter into lined baking pan, add raisins on top (optional). Press down until firmly packed. 
- Bake for about 20-25 or until batter is dry and slightly golden brown on the edges. 
- Let cook than cut into even squares and enjoy!

Dry Ingredients:
1 Cup all purpose flour
2 cups old fashioned oats
1 egg
1/2 tsp baking powder
1/2 cup (1 stick) melted unsalted butter
1/2 cup almond butter
1/2 cup light brown sugar
1/2 cup white granulated sugar
1 tsp vanilla extract
1 cup dried cranberries
