Chewy oatmeal cookie bars with dried cranberries.


Super delicious Oatmeal Cookie Bars with cranberries and almond butter. They are perfectly sweet, chewy and tart. Oh yes, I said it. These cookie bars are it is packed with incredible flavors. You also choose any other butters such as peanut butter.

If you guys are a huge fan of oatmeal cookies than you will definitely love these bars. They are incredibly delicious, and they are truly addicting.


Here are a few tips you need to know:


Tip 1: Melt butter on stove, or in the microwave. If you would like you can use brown butter.


Tip 2 : Always separate your dry and wet ingredients. This makes a huge difference and it is a very important step.


Tip 3: Soak the dried cranberries in water for about 15 minutes, than pat dry.

INSTRUCTIONS:

  1. Preheat oven to 350 degrees Fahrenheit and line a 8 inch square pan with parchment paper

  2. In a mixing bowl combine all purpose flour, oats, baking soda, and salt and set aside

  3. In a separate bowl mix in your melted butter, light brown sugar, white granulated sugar almond butter, eggs and vanilla extract, and whisk together until well incorporated.

  4. Slowly add in the the flour and oats mixture to the wet mixture, and combine well.

  5. Add in your dried cranberries.

  6. Transfer batter into lined baking pan, add raisins on top (optional). Press down until firmly packed.

  7. Bake for about 20-25 or until batter is dry and slightly golden brown on the edges.

  8. Let cook than cut into even squares and enjoy!

INGREDIENTS
Dry Ingredients:
1 Cup all purpose flour
2 cups old fashioned oats
1 egg
1/2 tsp baking powder
1/2 cup (1 stick) melted unsalted butter
1/2 cup almond butter
1/2 cup light brown sugar
1/2 cup white granulated sugar
1 tsp vanilla extract
1 cup dried cranberries
