

These Pesto Puff Pastry Pin Wheels are so easy and absolutely delicious. I love these pinwheels because they make such great little snacks. The best part is that everything you need to make can be found at your local grocery market and all you have to do is assemble. But off course, you can always use homemade Basil Pesto and puff pastry. For this particular recipe, I decided to use what was most convenient for me.
Adding the filling
Evenly spread the Basil Pesto on to the rolled out puff pastry, add in your sundried tomatoes and cheese. You can always add more, sun dried tomatoes to the filling and spread a little extra cheese on top of the pin wheels right before baking.

INSTRUCTIONS:
Preheat oven to 425 degree Fahrenheit
Take frozen pastry dough from freezer and thaw as instructed on package
Roll out pastry dough , spread about 1/2 cup of pesto, add roughly chopped sun dried tomatoes, and cheese.
Roll Puff Pastry into a log, using a sharp knife gently cut into 1/2 inch slices and place onto a lined baking sheet. With a baking brush, brush the outside of the slices with the egg wash mixture. Bake in the oven for about 15 minutes or until they are golden.
Enjoy while hot!

1 bag of frozen puff pastry ( thawed)
1/2 cup Basil Pesto
1/4 cup roughly chopped sun dried tomatoes
1- 1 1/2 cup shredded Mozzarella Cheese
1 whole egg For egg wash
about 1 tbsp of water
