
I love to create recipes with simple ingredients, and most of the time I try to work with what we have. So, for the holiday season, we stocked up on frozen puff pastry. Now we have so much in the freezer that are short dated and have to use up. So, I have been trying to create simple and easy recipes from all the puff pastry. For this particular recipe, I used a basil pesto base and added my favorite pizza toppings and cheese and baked the puff pastries in the oven and they turned out amazing.
You can add your desired toppings, just like the ones you would on your pizza. You can also use a pizza sauce for the base if you would prefer.

INSTRUCTIONS:
Preheat oven to 425 degree Fahrenheit
In a medium pan add in 1-2 tbsp olive oil, add salt, black pepper, ground chili powder, dried basil and cook zucchini until they are nicely sautéed and set aside,
Now take frozen pastry dough from freezer and thaw as instructed on package and roll out pastry dough , cut into 6 square or rectangle.
Spread pesto on to pastry, add cheese, black olive, cherry tomatoes and zucchini. Add in a little bit more cheese on top if desired.
Bake in the oven for about 10-12 minutes or until the cheese is bubbly, melted and ready,
Remove from oven and top it off with dried basil or fresh basil and enjoy.

This recipe serves about 6 people
INGREDIENTS
1 bag of frozen puff pastry ( thawed)
1-2 cups of basil pesto
2-3 zucchini sliced
1/3 cup cherry tomatoes cut into halves
1- 1/2 cups of mozzarella cheese or as much as needed.
Seasoning for zuccini
1-2 tbsp olive oil
1/2 tsp of salt or to taste
1/4-1/2 tsp black pepper or to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp ground chili powder
