Quinoa with Lentils

Delicious creamy Quinoa cooked in a coconut creamy sauce and added spices and lentils.


For this particular dish I added quinoa with lentils, onions, tomatoes, potatoes, and cooked it add coconut cream for a nice, creamy coconut flavor. This dish is so flavorful and so hearty. You can add in more vegetables to this dish. For dish dish, I used only potatoes. Zucchini, Eggplant and sautéed kale would also go great with this recipe.
Tip 1: Soak lentils overnight to help them cook easier
Tip 2: Try to use fresh garlic and ginger, instead of the jarred garlic ginger paste. It will make a huge difference.

INSTRUCTIONS :
- Heat a medium pan and add about 1 tablespoon oil Sautee garlic and ginger and stir for about a minute on medium high heat. Make sure the garlic and ginger do not burn. Add in your diced onions, and cubed potatoes. Let potatoes cook until tender. Add a little bit of water if needed and cover until they are full cooked and tender 
- Add in all spices and diced tomatoes and cook until tomatoes are about thick and more of a paste consistency . Now add in coconut cream and let simmer for about 2-3 minutes on medium low heat, add in your lentils and quinoa. Let simmer for about 5-10 minutes on low heat. Make sure to occasionally stir. 
- Taste for flavor and additional spices to your liking, serve with quinoa and enjoy! 
RECIPE:
This recipe serves about 3-4 people
INGREDIENTS
1 tbsp. vegetable oil or any oil of choice
1/2 cup cooked lentils
1 cup cooked quinoa
1 medium size onion
2 Roma tomatoes (diced)
Squeeze of lime juice
1-2 red dried chili (optional)
2 garlic cloves minced, chopped or grated
about 1/4 tsp grated ginger
1 1/4 cup unsweetened coconut cream
1/4 cup cilantro chopped for garnish ( Optional)
Seasoning:
2tsp tsp curry powder
1/2 tsp ground chili powder
1/4 tsp crushed red chili flakes
about 1/4 tsp salt or to taste
