Sweet Chili Potatoes

Fried potatoes with onions, bell peppers in a sweet and spicy sauce that is incredibly delicious.

Chili Potatoes are a very popular Indo-Chinese dish, its is a combination of Asian and Indian flavors combined together to form this incredibly delicious dish. For this recipe, I used a Sweet Chili paste to give it a sweet and spicy taste. I added sliced red bell peppers, sliced green bell pepper, sliced red onions, cilantro, sesame seeds and a squeeze of lime and it was just the perfect combination.


You can simply enjoy these Sweet Chili Potatoes as a snack or as a meal, maybe have it with naan or pita bread and call it lunch. For this particular recipe I used a Sweet Chili sauce along with Chili garlic sauce to give it more kick. However, you can always adjust the spiciness to your liking, so start of by adding lesser of the garlic chili sauce until it is to your liking.


Tip 1 : Soak the potatoes for about 30 minutes before frying to get a more crisper potato.


Tip 2: Lightly salt your potatoes since the sauces contain salt, you do not want it to be salty.

INSTRUCTIONS:


  1. Peel potatoes, cut into sticks ,wedges , or cubes than rinse well and pat dry. Transfer into a mixing bowl and add in salt, black pepper, chili powder and 2 tbsp of corn starch and combine well.

  2. Fry potatoes in a deep frying pan, make sure not to overcrowd them. Once golden brown and ready, transfer to a plate and set aside.

  3. In a separate pan, heat 2 tbsp of oil (your choice). Add in dried red chili, sliced onions until transparent. Add in bell peppers, and cook until tender. Add in your fried potatoes.

  4. Now add in, sweet chili sauce, garlic chili paste, soy sauce, chili powder, half of lime juice and combine everything well until well Incorporated and let cook for about 2-3 minutes of medium heat, make sure to gently stir to prevent potatoes from falling apart. Add in your sesame seed, and cilantro for garnish . Taste for seasoning, add salt if needed.

  5. Enjoy!

RECIPE:

This recipe serves about 4 people

INGREDIENTS:
2 tbsp canola oil
2 dried red chili peppers (optional)
4-5 medium size potatoes
1 red bell pepper
1 green bell pepper
1 red onion
1 tbsp sesame seed (preferably roasted)
Sauce
salt to taste
1/4 tsp black pepper or desired amount
about 4 tbsp or 1/4 cup of sweet chili sauce
2 tbsp garlic chili paste (your preference)
1 tbsp low sodium soy sauce
1 tsp ground chili powder 
1/2 juiced lime
1/4 cup chopped cilantro
Seasoning for Potatoes:
salt to taste
1/4 tsp black pepper
1 tsp ground chili powder
2 tbsp corn starch
