Sweet and spicy vegan tofu

Sweet Chili Chicken is a very popular Indo-Chinese dish, its is a combination of Asian and Indian flavors combined together to form this incredibly delicious dish. For this recipe, I was inspired by my chili chicken recipe, but instead of chicken, I decided to create a vegan addition. I added cubed and slightly fried firm tofu, added yellow bell pepper, and cooked in a a delicious sweet chili sauce.
RECIPE:
INSTRUCTIONS:
- Remove tofu and pat dry with paper towel to remove access water. Cut tofu in bite size pieces and slightly fry in a medium sauce pan , make sure to get them golden on each side. This will help the tofu hold when you combine with the sauce . Once done, set aside. 
- In a mixing bowl, add in your sweet chili sauce, soy sauce, Thai garlic chili sauce and mix and set aside. 
- In a medium pan, add in 1-2 tbsp sesame oil, add in your dried chili, ginger, and Sautee your bell pepper just until they are tender. 
- Now add in your tofu, sauce mixture and gently combine everything well until well Incorporated and let cook for about 2-3 minutes on medium heat. Taste for seasoning, add salt if needed. If sauce seems a little on the dry side, you can always add in more soy sauce or sweet chili sauce . Garnish with green onions. 
- Enjoy with rice! 
RECIPE:
This recipe serves about 4 people
INGREDIENTS:
2 tbsp canola oil or sesame oil and extra for frying 
2 dried red chili peppers (optional)
1 lb Firm Tofu
1 yellow bell pepper or any color of choice
3 spring of green onions
Sauce
salt to taste if needed
1/2 tsp of grated ginger
about 3/4 cup of sweet chili sauce
2 tbsp garlic chili sauce (your preference)
3 tbsp low sodium soy sauce
