Veggie Pad Thai

Delicious spicy and tangy vegetable Pad Thai you are sure to love.



I love Pad Thai and this Vegetarian Pad Thai is delicious, easy and quite simple to make. It is both sweet, spicy and tangy and guess what? all the ingredients to this recipe can be found at your local grocery market.


For the Sauce:

In most Pad Thai recipes they include fish sauce, however I did not include it in this recipe since it is a vegetarian Pad Thai. Instead I decided to add in a garlic chili paste (sauce). This sauce gives the Pad Thai a kick, it is garlicky, spicy and amazing. But if you do not like your food too spicy you can add less of the sauce.


Tip 1 : Soak rice noodles as directed on box, typically for about 25-30 minutes in hot water. Make sure not to over soak it, this will cause them to break.


Tip 2: If noodles seem a bit dry or sticky, you can just add a little bit more of the low sodium soy sauce and/ or squeeze lime.



Here's How to make it:

INSTRUCTIONS:


  1. Prepare the rice noodles as directed on box and set aside.

  2. Prepare your sauce by combining 1/4 cup of low sodium soy sauce, 2 tbsp white vinegar, juice of 1/2 a lime, 2 tbsp brown sugar and 2 tbsp or less of garlic chili paste and set aside.

  3. Chop your mushrooms, thinly slice your bell pepper, chop 1/3 cup roasted unsalted peanuts, chop cilantro, and set aside.

  4. In a wok or a medium size pan gently scramble 2-3 eggs with a little bit of oil (you do not have to season the eggs) and set aside.

  5. In same wok or pan heat 2 tbsp of canola oil and add in your mushrooms, bell peppers and cole slaw and sautee for about 5 minutes or so on high heat until they are tender.

  6. Add in your your rice noodles, scrambled eggs, chopped peanuts, chopped green onions, and sauce and gently mix together and let the noodles cook on the stove for abour 5-6 minutes or until al dente. Make sure to stir occasionally.

  7. Top it off with chopped cilantro, and more green onions, and chopped peanuts if you would like and a squeeze of lime. Enjoy while hot!

RECIPE:

This recipe serves about 4 people

INGREDIENTS:
1 8 oz Pad Thai Rice Noodles
2 tbsp canola oil 
2-3 eggs
2 red bell peppers
1 cup chopped broccoli
1 12 oz cole slaw mix
1 8 oz box of baby bella mushroom ( or any of choice, roughly chopped)
5-6 sticks of green onion (chopped)
1/4 cup chopped cilantro
1/3 cup chopped unsalted roasted peanuts
Salt to taste 

Seasoning for Sauce:
1/4 cup low sodium soy sauce (more or less to taste)
2 tbsp garlic chili paste (optional,more or less)
2 tbsp rice vinegar
1 tbsp brown sugar
1/2 juice of a lime
