Grilled Shrimp Skewers

Try our Grilled Shrimp Skewers. It is full of incredible flavors.


This Grilled Shrimp Skewers is quite simple to make. It is marinated with garlic, lemon and spices and grilled with zucchini, bell peppers and tomatoes. For this recipe I used a grill pan on my stove , however you can also use an outdoor grill.


These skewers go perfect in a salads, in a wrap, with pasta, rice or even couscous. They are simple, easy and delicious.


Tip 1: You can use frozen raw shrimp, just follow proper thawing instructions. Make sure it is deveined and you can remove tail or keep it for this recipe.


Tip 2 : Make sure you soak wooden skewers for at least 30 minutes prior to using them. This will prevent them from burning.

INSTRUCTIONS:


  1. Cut vegetables into small pieces, about the same as as the shrimp and put in bowl with shrimp.

  2. Make your marinate mixture, by adding in olive oil, grated garlic, lemon juice, salt, black pepper, ground chili powder, paprika, cayenne pepper, and dried oregano. Add this mixture to the shrimp and vegetables and let marinate for about 15 minutes.

  3. Now thread the shrimp into the skewers.

  4. Heat a grill pan on medium high heat. Now place the skewers onto grill pan and cook on each side for about 2-3 minutes or until cooked.

  5. Once cooked remove from pan and transfer onto a plate

RECIPE:

This recipe serves about 3-4 people

INGREDIENTS
about 8-12 wooden skewers
1 lb raw deviened jumbo shrimp (tail on or off)
1 zucchini
1/2 orange bell pepper
1 roma tomato

Seasoning for marinate:
1/4 cup Olive oil
2 garlic cloves grated
1/2 tsp salt or to taste
1/4 tsp black pepper or to taste
1 tsp ground chili powder
1 tsp paprika
1/4 tsp cayenne pepper (optional)
1/2 tsp dried oregano
