Healthy, quick and simple Quinoa with shrimp and vegetables.

Looking for something healthy to add to your diet. Then this dish might just be the one . It is a quinoa stir fry with zucchini, onions, red bell peppers and shrimp. It is so quick to make and full of incredible flavors. I used such simple ingredients to create this dish and everything you need to make this dish is listed below.

RECIPE:
INSTRUCTIONS:
- Cook quinoa as directed on package and set aside once ready 
- Dice and chop your vegetables 
- In medium pan heat 1 tbsp of olive oil, add in your chopped veggies and saute until tender 
- Add in your shrimp curry powder, salt, ground chili powder and once shrimp is cooked add in your cooked quinoa and sautee on medium high heat for about 1 minute or until well combined, squeeze in your lime and add chopped cilantro and mix. 
- Taste for seasoning , add additional salt in needed and enjoy while hot

INGREDIENTS
1 cup cooked quinoa
1 lb raw deviened jumbo shrimp (tail off)
1 tbsp olive oil
1 zucchini
1 red bell pepper
1 medium onion
1/4 cup chopped cilantro
Seasoning 
1/2 tsp curry powder
1/2 tsp ground chili powder
1/4 lime juice
salt to taste
