Cook quinoa as directed on package and set aside once ready
Dice and chop your vegetables
In medium pan heat 1 tbsp of olive oil, add in your chopped veggies and saute until tender
Add in your shrimp curry powder, salt, ground chili powder and once shrimp is cooked add in your cooked quinoa and sautee on medium high heat for about 1 minute or until well combined, squeeze in your lime and add chopped cilantro and mix.
Taste for seasoning , add additional salt in needed and enjoy while hot

1 tbsp olive oil
1 zucchini

1 medium onion
