Easy, Delicious shrimp tostadas


I am all about simple easy yet delicious homemade dishes. One main reason is because I am usually home alone with my two kids and I like to find simple recipes that are full of flavor, easy, simple, delicious and of course something the kids will enjoy.
For this particular Shrimp tostada recipe, I made a simple avocado mash, salsa, shrimp sautéed in spices , cabbage and added sliced jalapenos for some heat (optional) and served it with sour cream. However, the toppings are totally up to you. You can add sliced avocados on top, lettuce, cheese anything else you prefer on your tostada.

INSTRUCTIONS :
In a medium size pan heat 1-2 tbsp. of oil, add in your shrimp and seasoning cook until shrimp is ready. Set aside.
Mash 3-4 avocados, squeeze 1 lime , salt and pepper and mix together.
Dice your cherry tomatoes or regular roma tomatoes, onions, and cilantro and squeeze half a lime , add in your salt and pepper and set aside.
Assemble by spreading mashed avocado spread onto tostada , cabbage, cooked shrimp, salsa. Or any toppings you would like.
Enjoy with sour cream (optional).

This recipe serves about 6 people
INGREDIENTS
6 tostada Shells
For shrimp
1-2 tbsp olive oil
1 lb raw and deveined shrimp
1/2 tsp garlic powder
1/2 tsp ground chili powder
1/2 tsp paprkia
1/2 tsp cumin powder
salt and pepper to taste
For Avocado Sauce/Spread
2-3 large avocados
1 lime
1/4-1/2 cup chopped cilantro
salt and pepper
For salsa:
1 medium red onion
1/2 cup chopped cilantro
about 1-2 cups of cherry tomatoes or about 4 roma tomatoes
For toppings
1 avocado diced
Jalapeños
Sour cream
shredded cheese of choice
