Brown Butter Red Velvet Cake Mix Blossoms

Quick, easy and cute Valentines Day theme red velvet blossom cookies. I used a red velvet cake mix and formed it into cute cookie blossoms, coated in pink sanding sugar and centered with Hershey's Kisses chocolate. These cookies are super fun for Valentines Day and I love how simple it is to make and the kids and yourself will absolutely love it.


For this particular recipe I decided to use brown butter , typically for the cake mix cookies, it requires vegetable oil. However, you can use vegetable oil. I do have another Red Velvet cake mix cookie recipe and that one requires 1/2 cup of vegetable oil.


What's the difference between vegetable oil and brown butter in the cake mix?

I noticed that when I used vegetable oil the cookies were more cakey. This time around with the brown butter I noticed two things, one being that the texture was more cookie like, second the brown butter added such an amazing nutty flavor to the cookies. I would highly recommend browning the butter, Its quite simple and it really makes a huge difference in the cookies.


Forming the blossoms:

Alright, since we have no control of how much baking soda or baking powder is in the mix we want to make sure that the cookies are a cute and perfect size and since we are using melted butter, cookies do tend to spread out more. So in this case, we do not want them to spread to much and I will be honest it has happened to me. The first batch of cookies spread out too much because of the size of the cookie dough balls. Initially I formed my cookie dough balls about 1/2 tbsp round but than they spread out too much and the cookies became to thin and they were not how I wanted them to look. Than I tried again and Formed them into about 1 tsp round. I know that it might look so small but they turned out to be the perfect size for the cookies. So, once I formed them into about 1 tsp, I coated them with pink sanding sugar, and gently pressed down on the Hershey's kisses. Make sure not to press down to much just because than it will cause the cookie to spread even more.



Coating the blossoms:

These cookie blossoms are Valentines theme so I specially used pink sanding sugar, however, you can use any color sanding sugar, cane sugar or no coating for a less sweeter option. I also sprinkled a little bit of red sprinkles just to go with the theme, but this is totally optional and not required at all.



Tip 1: Cut the unsalted butter into cubes and melt on stove until brown. Once brown transfer into a glass measuring cup or bowl and let it cool in the fridge before using

Tip 2: Because red velvet cake does contain red dye, I would recommend using gloves to avoid your hands from staining.

INSTRUCTIONS:

  1. Preheat oven to 350 degrees Fahrenheit

  2. In a mix bowl add your brown butter and eggs and combine until well incorporated. Add in your cake mix and and combine well.

  3. Form into 1 teaspoonful balls, roll in pink sanding sugar until well coated, transfer into lined baking sheet. Gently press 1 Hershey's kisses in the center of the cookie balls. Bake in the oven for about 8-10 minutes. If your cookie dough balls are bigger you might need to bake them longer.

  4. Cool down and Enjoy!

INGREDIENTS
1 box red velvet cake mix
2 eggs
1/2 cup (1 stick) Unsalted brown butter
About 16 pieces Hershey's Kisses
Pink Sanding Sugar or any color for coating
