Oatmeal Raisin and Cranberry Cookies

Perfectly chewy oatmeal cookies with raisin and dried cranberries.


I am a huge fan of chocolate chip cookies, or any type of cookies with chocolate chips added. However, on the other had my husband is not a fan of chocolate. His favorite cookies are oatmeal cookies, specifically the Panera's Oatmeal with berries cookies. So I try to recreate it using my oatmeal cookie recipe and added raisins and dried cranberries and I will say they were perfect.
Here are a few tips you need to know:
Tip 1: Cut the butter and melt it in the microwave or on the stove and let cool down before using.
Tip 2 : Always separate the wet and dry ingredients.
Tip 3: You don't need to use a stand mixer. You can simply use a mixing bowl and whisk it by hand.

INSTRUCTIONS:
- Preheat oven to 350 degrees Fahrenheit 
- Combine your all purpose flour, old fashioned oats, salt, baking soda, baking powder and cinnamon and set aside. 
- Cream together melted butter, white sugar, brown sugar until well Incorporated. Than add egg and vanilla extract and mix well. 
- Slowly add the dry ingredients into the wet mixture. After it is well combined, add in your raisins and dried cranberries. 
- Grease your baking trays and form into 1 1/2 inch balls or use a medium size ice cream. Make sure they are about 2 inches apart. Gently press down. This will allow them to spread more. 
- Bake in the oven for about 12-14 minutes or until they are slightly golden brown. 
- Remove and let cool and transfer to a wire rack or a plate. 
- Enjoy with a glass of milk.

INGREDIENTS
1 cup all purpose flour
2 1/4 cups old fashioned oats
1/2 cup brown sugar
1/2 white granulated sugar
1 stick unsalted melted butter
1 egg
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 cup to 1/2 cup raisins
1/4- 1/2 cup dried cranberries
