Perfectly chewy oatmeal cookies with raisin and dried cranberries.


I am a huge fan of chocolate chip cookies, or any type of cookies with chocolate chips added. However, on the other had my husband is not a fan of chocolate. His favorite cookies are oatmeal cookies, specifically the Panera's Oatmeal with berries cookies. So I try to recreate it using my oatmeal cookie recipe and added raisins and dried cranberries and I will say they were perfect.
Here are a few tips you need to know:
Tip 1: Cut the butter and melt it in the microwave or on the stove and let cool down before using.
Tip 2 : Always separate the wet and dry ingredients.
Tip 3: You don't need to use a stand mixer. You can simply use a mixing bowl and whisk it by hand.

Preheat oven to 350 degrees Fahrenheit
Combine your all purpose flour, old fashioned oats, salt, baking soda, baking powder and cinnamon and set aside.
Cream together melted butter, white sugar, brown sugar until well Incorporated. Than add egg and vanilla extract and mix well.
Slowly add the dry ingredients into the wet mixture. After it is well combined, add in your raisins and dried cranberries.
Grease your baking trays and form into 1 1/2 inch balls or use a medium size ice cream. Make sure they are about 2 inches apart. Gently press down. This will allow them to spread more.
Bake in the oven for about 12-14 minutes or until they are slightly golden brown.
Remove and let cool and transfer to a wire rack or a plate.
Enjoy with a glass of milk.

1 cup all purpose flour
2 1/4 cups old fashioned oats
1/2 cup brown sugar
1/2 white granulated sugar
1 stick unsalted melted butter
1 egg
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp pure vanilla extract
1/2 tsp cinnamon
1/4 cup to 1/2 cup raisins
1/4- 1/2 cup dried cranberries
